Vinegar Cake

If you think this cake is too rich use a third less butter and only 2 eggs. Cream 6 ozs of butter with the same quantity of caster sugar. Add three well beaten eggs and 3/4 lobe dried and sifted flour. Dissolve 1/4 of a tsp of carbonate of soda in2 tbsp of milk and stir into the other ingredients. Have ready 6 ozs of nicely washed currants and the grated rind of half a lemon or orange and add them to the cake by degrees. When nicely mixed and beaten add a tbsp of vinegar just  before putting into the cake tin. Line a cake tin with greased paper, our in the mixture and ask in a steady oven for 11/2 hours.
