To colour jellies

Green

Boil a little spinach, take off froth and mix it with the jelly.

Crimson

Bruise a little cochineal, dissolve it in a small quantity of brandy. Add a portion of it are straining it to jelly.

Yellow

Take a little saffron. Tie it in a rag, dissolve it in cold water.
