Tapico Cream
Ingredients
- 1 quart Milk
- 1/2 Lemon, rind
- 2 ozs Sugar
- 11/2 ozs Crushed tapioca
- 4 Eggs
Method
If a small mould is required half the above ingredients. Boil the milk and the lemon rind, sweeten when quite boiling stir in the crushed tapioca and let it cook gently for 3/4 hour. Beat the old of the eggs and gradually mix well with tapioca and etc. Let the mixture cool little. Whip he cream and add it carefully. Fill a bordered mould with this and turn out to serve. Fill the inside with a compote of fruit.
