Sponge Cake

Ingredients

  • 1 teacup Flour
  • 1/2 teacup sugar
  • 2 dsp butter
  • 1/2 tsp Carbonate of soda
  • 1/2 tsp Cream of tartar
  • Juice of a lemon and grate the rind
  • 1 Egg
  • A little milk

Method

Put the butter in a cup to melt. Mix in the bowl the dry ingredients well. Beat up the egg and add 1/2 of the lemon juice and a little milk. Mix thoroughly into a soft dough. Add the butter last. Pour into a tine and bake for 1/2 hour

Icing: put the sugar into a bowl and press out all the lumps. Add the remainder of the lemon juice and ice the cake.
