Pickled Damsons
Ingredients
- 1/2 pt White vinegar
- 1/2 oz Whole Cloves
- 1/2 oz Stick cinnamon
- 4 ozs whole mace
Method
Wipe the damsons dry, prick each damson with a needle. To 1 quart of damsons put 1 gill of vinegar to 1 lb of lump sugar.put the damsons in a jar, boil the vinegar and sugar and pour it over them. Let it stand for 24 hours, heat it again and the next day boil all of it together not to burn the skins. Season with any kind of spices. In 6 weeks’ time put a 1/4 pt of vinegar.
