Oxtail Soup

Wipe and Trim the tail, ready jointed, dry and flour. Fry in a little dripping till nicely brown. Take out pieces and put in a saucepan. Make 11/2 pts (about enough to cover the pieces) of thin gravy using the flour to thicken. Add a large onion whole, 2 cloves, 2 or 3 peppercorns, a piece of parsley, or thyme, 1 carrot chopped, sprinkle of pepper, salt to taste. Simmer 3 hours or so.
