Ox Tail Soup

Soak it in lukewarm water. Cut up a small onion and put in a stew jar with a little pepper and cloves. Add the tail and pour cold water over it until it is covered when it commences boiling skim it constantly. When the scum has ceased to rise cover the jar closely and simmer for 2 hours. Strain the liquor though a sieve, add a little of **** and a glass of sherry. Return the meat to the soup. Warm up altogether and serve with a little of sauce.
