Open Jelly and whipped cream

Ingredients

  • 1 1/2 pts Jelly
  • 1/2 pt Cream
  • 1 glass Sherry
  • Sugar to taste

Method

Colour and flavour the jelly in the way preferred. Let a mould with a round hole in the centre stand in cold water for 30 minutes. Fill the mould with jelly and let it remain in a cold place  till it is set and then turn it out on a dish and fill the centre with whipped cream. Flavour with jelly and pounded sugar pile the cream high up in the centre and serve with jelly. The jelly should be made of rather a dark colour to contrast better with the cream.
