Marrow Pickle

Peel the marrow and cut into pieces about 1 inch square. Sprinkle with salt and let its stand 12 hours after drain it well. Take 1/2 gall vinegar, 1 oz ****, sa few chillies, 1/4 lb sugar, 6 eschalots, or small onions. Boil altogether 15 mins then throw the marrows in and boil for 6 to 10 minutes. When cold it is fit for use.
