Icing for cakes

For a large one beat and sift 8 ozs of fine white sugar. Put into a mortar with 4 spoonfuls of rosewater and the whites of two eggs. Beat and strained. Whisk it well when the cat is almost cold dip a feather in the icing and cover the cake well. Set it in the oven to harden hut do not let it discolour. Put the cake into a very dry place.
