For Pickling Ham
This quantity of ingredients is for 2 Hams.
Ingredients
- 2 Hams
- 1lb Bay salt
- 3lb Common salt
- 2 ozs Black pepper
Method
Sift through a one sieve then add to this 2 lb of coarse brown sugar. Rub the hams with this made hot for 4 days then pour over them 2 lb of treacle. Let the hams lie in this pickle for 2 weeks turning them every day. Then take 2 ozs of juniper berries and bruise them and put them into 2 quarts of beer quite hot. Let them stand for 10 minutes by the fire stirring it. When quite cold pour it over the hams. Let them remain in the pickle for 4 weeks longer stirring them every day then hang them up to dry.
