Put 2 teacupful of water and 1lb sugar into a brass pan. Beat 1/4 lb butter into a cream and when the sugar is dissolved add the butter and keep stirring the mixture over the fire. Before the toffee is done add * drops essence of lemon. Butter the dish pour in toffee. 30 minutes is sufficient to do it.
