Dandelion Wine

Pour over 4 quarts of dandelion flowers 1 gal of boiling water. Stir it well round and cover with a blanket to stand 3 days during which time it should b stirred often. Strain off the flowers from the liquid and boil it for 1/2 an hour with the rind of 1 lemon and 1 orange, a little ginger and 31/2 lbs of sugar. Put it into a vessel, ferment with a little yeast after a few days put it into the barrel and when finished working stop **** previously adding **** isinglass.
