Coconut Ice
Boil 1 lb loaf sugar in a brass pan with just enough water to prevent burning. Boil for ten minutes and pour into a basin stirring quickly with a wooden spoon till it turns quite white. Put in 1/2 lb desiccated coconuts and pour into a grated tin. Colour the remainder with cochineal and pour over the whip ice. when cold and set it is ready to cut into bars.
