Christmas Cake

Ingredients

  • 1 lb Flour
  • 1 lb Butter
  • 1 lb Castor Sugar
  • 1 lb Sultana
  • 3/4 lb Currants
  • 1/2 lb Mixed peel
  • 6 Egg
  • 1 wineglass Brandy
  • 1 tsp Cinnamon

Method

Cream the butter and sugar together then add the beats eggs, a glass of brandy and the spice. Beat all well together and bake in a moderate oven for 21/2 hours to 3 hours. This cake will keep for a long time and will improve for keeping. 2 ozs of blanched almonds form a nice addition to these quantities. (This is the one that I make.)
