Brain Fritters

Ingredients

  • 10 ozs Brain
  • 2-3 ozs Chopped parsley
  • Breadcrumbs
  • 1 Egg
  • 1/2 tsp mixed herbs
  • Salt and pepper

Method

Boil the brains till done then cut in slices. Season the breadcrumbs and mix with parsley and herbs. Brush the slices of brain with the eggs. Coat in breadcrumbs and fry till brown.
