Apricot Jam

Ingredients

  • 1 lb Dried apricots
  • 3 lbs Sugar
  • 2 quarts cold water
  • A few bitter almonds

Method

Wash the apricots and then cut each half into four. Put the water over them and let it stand until morning . Add the almonds cut into slices and boil gently for 1 hour. Take off the fire and stir in 3 lbs of sugar. Boil 3/4 hour. Makes 7 lbs of jam.
