Almond Cakes

Ingredients

  • 1/2 lb Sweet almonds
  • 1 oz Bitter almonds
  • 6 Eggs
  • 8 tbsp Sifted sugar
  • 5 tbsp Fine flour
  • Grated rind of 1 lemon
  • 3 ozs Butter

Method

Blanch and pound almonds to a paste. Separate whites from yolks of the eggs, beat butter, add them and the almonds, stir in flour. Sugar and lemon rind, add butter which should be beaten to a cream and when all the ingredients are well mixed put in the whites of the eggs which sold be wicked to a stiff froth. Butter a cake mould, put in the mixture and bake in a good oven for 11/2 hours.
